A versatile thin Japanese all-purpose kitchen knife, similar to a chef's knife, the Santoku is a modern cook's knife used in preparing not only fine Asian but also Western cuisine. The extremely sharp and finely ground blade is also designed slice chicken and meat, chop herbs, dice fruit and vegetables quickly and finely, featuring a fluted edge to allow small pockets of air to form and prevent extra thin or soft slices from sticking to the blade.
